This knife was developed for Global's 40th anniversary and is only available in a limited edition. It is a Japanese kiritsuke of 15 centimeters. A classic kiritsuke is long and simple sharpened and is traditionally used by Japanese chefs, as the knife is considered difficult to master. This is a double-ground variant in a smaller size, which makes it significantly easier to handle. You can use the knife for most ingredients and tasks in the kitchen. The knife is sold both individually and in an anniversary set together with a chef's knife and an all-purpose knife.
