The Nordic kitchen Vegetable knife is specially designed to cut through even the most resistant and hard vegetables. This makes it easy to slice, dice, julienne and batonnet veggies, but also makes it perfect for precision fruit cutting. The blade is forged from 67 layers of Damascus steel (10Cr15CoMoV). The complex manufacturing method results in an exquisitely patterned blade offering an outstanding combination of strength, flexibility and durability. The blade hardness rating is an impressive HRC 60 ±2 to ensure long-lasting sharpness and minimal maintenance. The pakka wood shaft sits stably and comfortably in the hand, while the protective quillon doubles as a natural thumb-rest. A versatile precision knife in a handy size.
