Which frying pan should I choose?

Non-stick or cast-iron pans?
Cast-iron pans are, as the name suggests, made of iron and cast in a mould. A cast-iron pan is really good for steaks and vegetables that need to be fried at higher temperatures. Even if they can withstand high heat, cast-iron pans should always be heated up slowly, as very high preheating can damage the iron. If you take good care of your cast-iron pan, it will last a lifetime. Clean your pan with warm water and brush or sponge - soap isn’t good for cast-iron pans. Make sure that the pan is completely dry when you put it back in the kitchen cabinet, this way you avoid rust on the pan's surface. Grease your cast-iron pan with cooking oil from time to time to make it last longer. For fish, chicken, omelette, pancakes and vegetarian dishes that don't need to be cooked over high heat, and should preferably slide easily and elegantly off the pan, a non-stick pan with a ceramic coating is abetter choice. These pans are also much lighter to work with, so you can easily (with practice) turn the brunch pancakes and omelette in the air while your guests are drinking champagne and admiring your amazing kitchen skills!
